1) Dough: 8/10
On their website they state “The dough of the pinsa, made with four different GM-free organic flour and extra virgin olive oil, is subjected to 2-3 days leavening. This process makes the pinsas light and easy to digest, and gives them a unique consistence and flavor. The pinsas are cooked in the electric oven and their combinations of toppings are carefully studied and always different.”
The dough is not very thin both in the middle and on the border.
I usually prefer the thin one but I have to admit that even though here the dough is thicker, it is indeed very light and also super crunchy so I really enjoyed it.
2) Toppings: 10/10
The coolest thing here is indeed the quantity and the preciousness of the toppings.
As you can see in the pictures the ingredients totally cover the dough without even leaving space to the usual empty border!!
In my opinion the amount of them is perfect and they taste great.
Although they don’t state anything about their provenience or quality, I would trust them because the pizza makers bake the pinsas in front of the customers so you can watch them while putting fresh ingredients on the top of your pizza.
Finally I think this is a great mix of ingredients but they also have many other original combinations that I would like to taste!!
3) Value: 9/10
I paid 4€ for this piNSa and I think this is quite fair.
The size of the pizza is not very big but the quantity of the toppings is perfect and the ingredients are special.
I won’t rate this factor 10 only because I prefer rounded big pizzas more than elliptical little pizzas.
4) Service: 9/10
Since this place is very close to working places, it was very crowded during lunch time but the service was super quick anyway!
The pizza is served sliced in 4 pieces, the guys that work there are super nice and the atmosphere is very relaxed.
5) Side Effects: 9/10
I felt a bit thirsty because of the salty sun-dried tomatoes but the dough was pretty light and the pizza was not very big so I didn’t experience any bloating 🙂
- OVERALL RATING: 9/10 (the new old roman style pizza in Rome!)
- DESSERT SUGGESTION: Gelato from Palazzo Del Freddo Giovanni Fassi (pistachio, white chocolate and whipped cream!)
