1) Dough: 10/10
The dough is thin in the middle, while very puffy and soft on the outside: the crust is not overcooked, not so crunchy but very delicious.
It is very light because it is made in a special way with high quality ingredients.
They state in their website that they use

Organic semi whole flour, Enkir, kamut, rye and corn.
24 hours slow fermentation with alive mother dough at room temperature.
No yeast for the special dough made with the hydrolysis of starch.

They offer special dough made with different flours but I only tried the “normal” one, that is made with organic semi-whole wheat flour. I’ll go back to taste the other kinds!!!

2) Toppings: 10/10
They say :

The toppings are made with the highest quality products; they’re organic and slow food approved.
There’s an extensive use of vegetables and a constant presence of vegetarian choices on the menu.

…and that’s true!
I mean.. it’s October and it’s pumpkin season so I can tell you that a pizza with pumpkin and mushrooms is just what you need!!!
The quality of the toppings is undeniable: the cheese melts in your mouth and the vegetables create an explosion of flavor; sage oil just makes everything more fragrant and almost aphrodisiac.
As for the quantity of the toppings I think it’s perfect since it’s almost overloaded but in this way you can clearly taste all the different ingredients: they make a great mix together!!
I can’t wait to taste all the different toppings!

3) Value: 8/10
I paid this meal 14,50€: 12€ is the price of the pizza and 2,5€ the service fee (plus water!).
This is objectively a lot for a traditional pizza but the thing is that this is not a traditional pizza: everything is special, from the organic and healthy dough to the quality of the ingredients, from the variety of the toppings to its digestibility.. so its value is also objectively higher.
Of course it’s not a cheap place but you definitely get what you pay for.

4) Service: 9/10
This place is brand new since it opened less than 15 days ago; I like the atmosphere and the art on the wall and it looks bigger than the other restaurant in Bologna.
I went here on Thursday night because on Saturday I guess it will be too crowded; it was quiet so I had a great experience. The waiters and everyone were super nice and caring without being too demanding.
They serve the pizza sliced and they are quite fast to get the pizza done (5 minutes?)!!
As in Bologna they offer the tasting menu (”You choose the pizzas and we bring them one at a time, this way you can taste more combinations of ingredients without losing the aroma of freshly baked pizza!”) but I went alone so I couldn’t do it…I’ll go back with other people also for that!! Ahah.
The only flaw is that they don’t offer delivery options 😦

5) Side Effects: 10/10 This is one of the few pizzas that doesn’t cause me any problem. No thirst, no bloating, anything 🙂

  • MOVIE SUGGESTION: The Secret Life of Pets (watched right after the pizza, fun way to end a perfect night!)
